Ingredients

package (8 oz) lo mein noodles
1/3
cup peanut butter
1/4
cup soy sauce
1/4
cup orange juice
1/4
teaspoon ground red pepper (cayenne)

medium carrots, shredded (2 cups)
1
large red bell pepper, cut into 1/4-inch strips
6
medium green onions, sliced (6 tablespoons)
1/2
cup dry-roasted peanuts

Directions

  • 1 Break noodles into thirds. Cook and drain as directed on package. Rinse with cold water; drain.
  • 2 In small bowl, mix peanut butter, soy sauce, orange juice and red pepper until smooth.
  • 3 In large bowl, toss noodles, peanut butter mixture and remaining ingredients.
