Go vegetarian with a perky noodle salad that's ready in less than 30 minutes.
package (8 oz) lo mein noodles
cup peanut butter
cup soy sauce
cup orange juice
teaspoon ground red pepper (cayenne)
medium carrots, shredded (2 cups)
large red bell pepper, cut into 1/4-inch strips
medium green onions, sliced (6 tablespoons)
cup dry-roasted peanuts
Break noodles into thirds. Cook and drain as directed on package. Rinse with cold water; drain.
In small bowl, mix peanut butter, soy sauce, orange juice and red pepper until smooth.
In large bowl, toss noodles, peanut butter mixture and remaining ingredients.
Vermicelli or capellini can be used for the lo mein noodles.
