Peanut Butter-Ganache Bars

Blogger Brooke McLay from Cheeky Kitchen shares a favorite recipe. Betty Crocker cake mix is turned into a crunchy bar cookie, topped with a layer of peanut butter, and finished off with a thick layer of ganache. A simple, decadent dessert.

Ingredients

Crust

box Betty Crocker® SuperMoist® devils food cake mix
1/3
cup butter
1
egg

Filling

3/4
cup butter, softened
3/4
cup peanut butter
1
teaspoon vanilla
3
cups powdered sugar (about l lb)
2
tablespoons milk
3/4
cup honey-roasted peanuts, chopped, if desired

Ganache

1
cup semisweet chocolate chips (6 oz)
1
cup milk chocolate chips (6 oz)
1/2
cup whipping cream

Directions

  • 1 Heat oven to 350°F. In medium bowl, mix crust ingredients; press in bottom of ungreased 13x9-inch pan. Bake 12 minutes. Cool completely, about 30 minutes.
  • 2 In large bowl, mix all filling ingredients except peanuts until smooth and well blended. Stir in peanuts. Spread and pat filling evenly over cooled crust.
  • 3 In medium microwavable bowl, microwave ganache ingredients on High 1 minute. Stir with whisk; microwave about 30 seconds longer. Stir again until mixture is smooth. Spread ganache over filling. Let stand at room temperature until set and completely cooled, 2 to 3 hours. Cut into 4 rows by 3 rows.

A layer of parchment paper on the bottom of your pan is a great way to keep these bars looking great. It makes removing your bars from the pan super simple, and clean up is even easier!

I entered this recipe into our local fair and won a blue-ribbon! I didn't have chocolate cake mix at the house, so I substituted white cake mix (and I didn't have whipping cream so I sub. milk instead). They turned out great! I actually made it in a 9x9 pan, so they were a little bit thicker, and I liked the thickness (just cut the pieces smaller). They are very good and we have a blue ribbon to show for it!

very easy to make,but very rich...def cut them into smaller squares. My 18 y/o son took the whole tray to his room (wants them all!).. will be great to bring for the desert table at thanksgiving

These were good but very sweet. The peanut butter layer didn't have the peanut butter flavor I was hoping for. I've found much better peanut butter/chocolate bars I'd make before I make these again.
