Peanut Butter Cut-Out Cookies

This is a great recipe to do with the kids. We always use it at Halloween and Christmas. It is a great alternative to sugar cookie cut-outs.

Ingredients

1/2: cup butter

1: cup Peanut Butter chips

2/3: cup brown sugar

1: egg

3/4: teaspoon vanilla extract

3/4: teaspoon baking soda

1 1/3: cup flour

1: cup chocolate chips

1: tablespoon shortening

Directions

1 Combine butter and peanut butter chips in small sauce pan and cook over low heat, stirring constantly, until melted.
2 Pour into large bowl, add brown sugar, egg, and vanilla, beating until well blended.
3 Stir in flour, baking soda, and blend well.
4 Refrigerate 15-20 min. or till firm enough to roll.
5 Heat oven to 350. Roll out dough, small portion at a time on lightly floured surface. Cut into shapes; place 2 inches apart on ungreased cookie sheet.
6 Bake 7-8 min. or until almost set. Cool 1 min. then remove from sheet. Cool completely, then drizzle with chocolate or icing.
