Peanut Butter Cut-Out Cookies

This is a great recipe to do with the kids. We always use it at Halloween and Christmas. It is a great alternative to sugar cookie cut-outs.

cup butter

cup Peanut Butter chips

cup brown sugar

teaspoon vanilla extract

teaspoon baking soda

cup chocolate chips

tablespoon shortening
  1. Combine butter and peanut butter chips in small sauce pan and cook over low heat, stirring constantly, until melted.
  2. Pour into large bowl, add brown sugar, egg, and vanilla, beating until well blended.
  3. Stir in flour, baking soda, and blend well.
  4. Refrigerate 15-20 min. or till firm enough to roll.
  5. Heat oven to 350. Roll out dough, small portion at a time on lightly floured surface. Cut into shapes; place 2 inches apart on ungreased cookie sheet.
  6. Bake 7-8 min. or until almost set. Cool 1 min. then remove from sheet. Cool completely, then drizzle with chocolate or icing.
