Gluten Free Peanut Butter Chocolate Chip Bars with Chocolate Frosting

box Betty Crocker® Gluten Free chocolate chip cookie mix
1/3
cup butter, softened
1/3
cup gluten-free peanut butter
1
teaspoon gluten-free vanilla
1
egg
1
cup Betty Crocker® Rich & Creamy chocolate frosting

Directions

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of (8- or 9-inch) square pan.
  • 2 In medium bowl, stir together cookie mix, butter, peanut butter, vanilla and egg with spoon until soft dough forms (dough will be crumbly). Pat dough into pan. Bake 18 to 22 minutes or until edges are dry and golden brown. Run knife around inside edge of pan. Cool on wire rack about 1 hour.
  • 3 Spread frosting over bars. Cut into squares, 4 rows by 4 rows.

LOVE LOVE LOVE these bars!! The cookie is definitely crumbly (not doughy) as it should be. NO typical gluten-free aftertaste whatsoever & Not overly sweet. I made these for family and they were gone in minutes. Most of my family made comments like ..."this tastes WAY too good to be gluten-free." Thank you Betty Crocker for being a mainstream company who supports gluten-free products! TIP: Add slightly more butter than the recipe calls for as the dough has a much drier consistency than typical cookie dough.

I have made these for my volleyball and cheerleading teams several times and the girls LOVE them! They are a little crumbly, so I had some extra peanut butter to help them stay together a little better.

These were extremely easy to make. I actually melted the butter to make them less crumbly, which seemed to work out. The bars were enjoyed by the gluten free and wheat-eaters.
