Peach and Raspberry Cobbler

Dessert doesn't get any better than a favorite fruit combo transformed into an easy, warm-from-the-oven cobbler!

Ingredients

cups sliced fresh peaches
2
cups fresh raspberries
1/2
cup granulated sugar
1
tablespoon cornstarch
1
teaspoon ground nutmeg
2
cups Original Bisquick® mix
1/2
cup milk
3
tablespoons butter or margarine, melted
2
tablespoons packed brown sugar

Directions

  • 1 Heat oven to 375°F. Lightly butter bottom and side of 9x1 1/2-inch deep-dish pie plate or 2-quart casserole.
  • 2 Mix peaches, raspberries, granulated sugar, cornstarch and nutmeg in large bowl. Let stand 10 minutes. Spoon into pie plate.
  • 3 Stir together remaining ingredients in same bowl until dough forms. Drop dough by spoonfuls onto fruit mixture. Bake 25 to 30 minutes or until fruit is bubbly and topping is deep golden brown and thoroughly baked.

Good and easy! Kids loved it, but I found it a bit sweet, even with peaches that were not sweet to start with. I reduced nutmeg to 1/4 tsp and added 1/4 tsp cinnamon to both the fruit and cobbler. Next time I'll reduce the sugar and cook for more than 25 minutes. Quite juicy too, but I like it that way.

I loved the combination of peaches and raspberries but found the cobbler a little dry and not enough flavor. I would add regular sugar to the dry ingredients next time and a little cinnamon to the fruit.

Very good! I was out of cornstarch and used flour, not quite the results I expected, but it was still very good! The peach and reasberry flavors do not overpower each other and work very well together. Yummy!
