cups sliced peaches

medium stalk celery, sliced (1/2 cup)

cup honey-roasted peanuts, if desired

  • 1 In large bowl, toss all ingredients except peanuts. Top with peanuts.

This is a fantastic salad when made with the fresh peaches that are in season now. The honey roasted peanuts added a special touch that enhanced the salad''s flavor and texture. We''ll have this several times while the peaches are in season.

This salad got the approval of three kids, including two teenagers. It was a nice light summer meal. I used grilled chicken tenders. The crunchy peanuts were a nice touch. We''ll definitely have it again.
