This is my family's favorite cookie! I eliminate the jelly portion of the filling and use extra crunchy peanut butter to add to the vanilla frosting. I have also used chunky peanut butter with chocolate frosting as well. These cookies disappear from the plate!

I did use jelly, because believe me the peanut butter frosting in enough. So rich and oh so yummy. I'm not a huge peanut butter fan, but these are my fav.

This is my family's favorite. Instead of adding jelly, I double the amount of peanut butter and use the crunchy peanut butter instead. I have also used chocolate frosting with the peanut butter to use as a filling. Yummy!

I loved making these for my nephew while he was here in college. He and my brother ate them all that very night.
