Ingredients

cup creamy peanut butter
2
eggs

teaspoons vanilla
1
cup packed brown sugar

cups Original Bisquick® mix
1
cup semisweet chocolate chips (6 oz)
1/2
cup chopped macadamia nuts

Directions

  • 1 Heat oven to 350°F. In large bowl, mix peanut butter, eggs and vanilla. Stir in brown sugar until combined. Add Bisquick mix, chocolate chips and nuts, stirring just until moistened. Dough will be crumbly.
  • 2 Shape dough into 1-inch balls. Place about 2 inches apart on ungreased cookie sheet; flatten slightly.
  • 3 Bake about 12 minutes or until golden brown. Remove from cookie sheet to cooling rack.

I made these yesterday and I think they came out pretty good. I didn't put in the nuts, just used the chocolate chips. Mine didn't come out dry at all. Mine were soft and a little chewy. So maybe it's a difference in the PB used. I used regular Skippy creamy (don't know if I can say that or not). I'm very satisfied with them and the only thing I would do next time is put more chocolate chips in to make up for the lack of nuts. They are tasty and were quick and easy to make.

Something is missing. When I searched for cookie recipes, using Bisquick, I wanted to make something like Peanut Butter or Sugar cookies, using Bisquick, albeit the baking soda, baking powder, and or salt. When I spotted this recipe, I immediately thought, "perfect"! Well, when I began putting the ingredients together, I then thought, "where's the butter", and then assumed, "maybe the Peanut Butter makes up for the missing butter"; WRONG. The cookies came out a bit dry, lacking flavor, and as I said, something is DEFINITELY missing.
