Ingredients

cup Old El Paso® salsa (any variety)
2/3
cup uncooked elbow macaroni (2 ounces)
3/4
cup water
2
teaspoons chili powder
2
cups Progresso® red kidney beans (from 19-oz can), drained, rinsed
1
can (8 ounces) tomato sauce
1/2
cup shredded Cheddar cheese (2 ounces)

  • 1 Heat all ingredients except cheese to boiling in 10-inch nonstick skillet; reduce heat.
  • 2 Cover and simmer about 15 minutes, stirring frequently, until macaroni is tender. Sprinkle with cheese.

This was good and hearty, but not anything extraordinary. I added frozen corn and cumin. I will make again in a pinch!

I made this last night...or I should say, it basically made itself!! This is the absolute easiest meal I've ever made in my life. Not a single knife was used! I'm a vegetarian and my husband is not and we both loved it. I added extra chili powder and cayenne pepper. I have no idea how this would serve 4 people. We split this in two instead of four servings and it was the perfect serving size, and we're definitely not gluttonous! We served with a side of cucumber tomato salad with rice wine vinegar to cool down the heat. I'll make this any night of the week. Delish!

This was soooo good!!! My husband told me how yummy this was over and over again. I made it just as written and ate mine with chips (my hubby ate it as is) I will be making this again.
