I made this last night...or I should say, it basically made itself!! This is the absolute easiest meal I've ever made in my life. Not a single knife was used! I'm a vegetarian and my husband is not and we both loved it. I added extra chili powder and cayenne pepper. I have no idea how this would serve 4 people. We split this in two instead of four servings and it was the perfect serving size, and we're definitely not gluttonous! We served with a side of cucumber tomato salad with rice wine vinegar to cool down the heat. I'll make this any night of the week. Delish!

This was a big hit at my house. Very easy with a lot of flavor. It is always nice to find a quick and inexpensive meal that utilizes things we have in our pantry day to day. My husband loved it.

I didn't care much for this recipe, however, my son really liked it. It was super easy and quick. I will make it again but will use less noodles, add more beans and add a little more spices to it.
