pound pork tenderloin

tablespoons seasoned bread crumbs

tablespoon grated Parmesan cheese

teaspoon salt
pepper

teaspoons canola oil
1/4
cup chopped onion

clove minced garlic
  1. Cut pork into four slices; flatten to 1/4-inch thickness. In a shallow bowl, combine the bread crumbs, Parmesan cheese, salt and pepper. Add pork, one slice at a time, and turn to coat.
  2. In a large skillet over medium heat, cook pork in oil for 2-3 minutes on each side or until meat is no longer pink. Remove and keep warm.
  3. Add onion and garlic to the pan; cook and stir until tender. Serve with pork.
