Ingredients

1/2
pound pork tenderloin
2
tablespoons seasoned bread crumbs
1
tablespoon grated Parmesan cheese
1/4
teaspoon salt
pepper
2
teaspoons canola oil
1/4
cup chopped onion
1
clove minced garlic

  • 1 Cut pork into four slices; flatten to 1/4-inch thickness. In a shallow bowl, combine the bread crumbs, Parmesan cheese, salt and pepper. Add pork, one slice at a time, and turn to coat.
  • 2 In a large skillet over medium heat, cook pork in oil for 2-3 minutes on each side or until meat is no longer pink. Remove and keep warm.
  • 3 Add onion and garlic to the pan; cook and stir until tender. Serve with pork.

This sounds very similar to the way I make my homemade chicken nuggets except I don't use bread crumbs. I use bisquick. I never thought of using pork pieces. Will definately try this and post a review! :-)
