cups Original Bisquick® mix
1/2
cup milk
2
tablespoons vegetable oil
1
egg
1/2
cup freshly grated Parmesan cheese
2
tablespoons basil pesto
6
eggs

  • 1 Spray waffle maker with cooking spray; heat until hot. In large bowl, stir together Bisquick mix, milk, oil and 1 egg just until combined (don’t overmix). Fold in cheese and pesto.
  • 2 Pour batter onto center of hot waffle maker. (Check manufacturer’s directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle; cover to keep warm. Repeat with remaining batter.
  • 3 Meanwhile, fry or poach 6 eggs.
  • 4 To serve, place 2 waffles on each plate; top with 1 fried egg.

The batter in this recipe is enough to make 12 (4-inch-square) waffles. Since waffle makers vary, you may get a different yield.

Most waffle makers have a light that indicates when the waffles are done. Don’t lift the lid before the light is lit to ensure that the waffles are completely cooked and won’t stick.

Serve crisply cooked bacon or sausage links alongside the waffles to complete the meal.

The batter in the recipe is very thick. I put my waffle maker on low and for most of them <3 min and they were all cooked thoroughly. Fried or poached eggs work just as well, as long as all of the waffles are cooked first. PS I used "not fresh" parmesan i.e. put in the fridge after opening parmesan. I put it in while mixing and then folded in the pesto. I think it turned out pretty well.
