Forgot to mention that I also used a can of diced tomatoes with roasted garlic and onions (drained) instead of the fresh tomato. Great addition!

This has become one of my new favorite recipes!!! I used fresh green, red, and orange bell peppers; dehydrated onions; homemade meatballs; and added crushed red pepper to the peppers and onions when they were cooking. Very, very tasty!

I made this as listed except added a can of chipotle diced tomatoes instead of a fresh tomato. This gave it a different flavor. I think I would use the Italian seasoned diced tomatoes next time. I thought this was good and easy to make but my fiance didn't like it as well.

I've made this recipe a few times over the last few months and I have to say that I love it. Very simple yet it has a lot of flavor.

We LOVED this! I made a few minor modifications as well: I used fresh red, yellow and orange pepers (about half each) and increased the peppers/onions to about two cups total. I also added a few spices and used grape tomatoes to make it easier for my picky eater to take them out. Next time my hubby has requested that I try substituting black olives for the tomotoes, so we're going to give that a shot this week.

Made this today for lunch, it was delicious. It is a great go to recipe, when you need a quick dinner and have nothing thawed out. My whole family loved this dish and it couldn't be easier.

Very TASTY! I made my own meat balls with ground turkey- seasoned with Italian seasoning, egg, bread crumbs, little fresh Parmesan. I also used chicken broth instead of beef. I did have to add a little more broth towards end of cooking time.. I didn't have parsley so I used little fresh cilantro. All Flavors came together wonderfully...Entire family including kids enjoyed

I used fresh onion and yellow bell pepper, too, and cooked them in olive oil, not the Italian dressing. I did add Italian dressing with the beef broth. Love this easy weeknight meal and good as leftovers!
