I didn't peel the squash it cooks well and adds a nuttiness I did panic and added water as it seemed to be drying out - I turned it down to 325 with about 1/4 cup water in the base taking care not to drench the breadcrumb mix. Delicious I would not describe as gratin, Gratin in the french terminology is very creamy/cheesy but oh my word, I will do this again. a classically trained English/french cook.

I didn't use butternut as I was out, instead used regular yellow neck squash. It was quite amazing. I didn't expect it to be so tasty. Can't wait to try it with butternut.

This is a great recipe for butternut squash. I love squash but have never tried butternut squash. It is delicious! Parmesan cheese is the perfect addition. My only problem is peeling it. Does anyone have a suggestion to make peeling easy?

Oh my! I didn't think this was going to be so good. My husband, son and I ate it up. We just started A food combining diet and this fit in perfect. Was Outstanding!! I sent to several friends. AWESOME. Btw got a workout peeling and cutting it in half. Was a booger.

This was a huge hit at both Thanksgiving and Xmas, even for my brother and son who normally don't like butternut squash. Instead of slicing and layering, though, I found it much, much easier to cube the squash and spread it in the pan. Really yummy!

Very good with Ham for Christmas dinner. Was able to easily adapt for vegan grandchild by using margarine, and sprinkling his portion first with breadcrumbs before adding the parmesan to the crumbs. Also topped his portion with paprika so he would know which was his. Big smile on his face as he loaded up his plate.

What a wonderful butternut squash dish! I accidentally used half-again as much garlic, but it was fantastic. No leftovers, so I guess we'll be making it again soon!
