Panko Crusted Salmon with Basil Sauce

This excellent salmon is easy, elegant and impressive. Serve with steamed or grilled asparagus and angel hair pasta tossed with olive oil and parsley.

Ingredients

1 1/2
lb salmon fillet (1 inch thick)

tablespoons butter or margarine, melted
1/2
cup Progresso® Italian style panko bread crumbs
1/4
cup shredded Italian cheese blend (2 oz)
1
can (18 oz) Progresso™ Recipe Starters™ creamy Parmesan basil cooking sauce, heated

Fresh basil leaves

Directions

  • 1 Heat oven to 375°F. Spray shallow baking pan with cooking spray. Pat salmon dry with paper towels. Place salmon, skin side down, in pan. Brush with 1 tablespoon of the melted butter.
  • 2 In small bowl, mix bread crumbs, cheese and remaining melted butter. Lightly press bread crumb mixture evenly on salmon.
  • 3 Bake uncovered 15 to 25 minutes or until fish flakes easily with fork. Serve heated cooking sauce over fish. Sprinkle with fresh basil leaves.
