Overnight Rotini Bake

Fix and forget this tasty make-ahead Italian casserole. A little work the night before and you’ve got yourself a no-fuss, no-muss cheesy beef-and-pasta dinner.

Ingredients

pounds lean ground beef

large onion, chopped (1 cup)

large bell pepper, chopped (1 cup)

large cloves garlic, finely chopped
1
can (28 ounces) crushed tomatoes, undrained

cups hot water
1
envelope (1 ounce) onion soup mix (from 2-ounce package)
1
teaspoon Italian seasoning
3
cups uncooked rotini or fusilli (corkscrew) pasta (9 ounces)
1 1/2
cups shredded Italian cheese blend or mozzarella cheese (6 ounces)

Directions

  • 1 Spray rectangular baking dish, 13x9x2 inches, with cooking spray.
  • 2 Cook beef, onion, bell pepper and garlic in 4-quart Dutch oven over medium-high heat, stirring occasionally, until beef is brown; drain. Stir in tomatoes, water, soup mix (dry), Italian seasoning and pasta. Spoon into baking dish.
  • 3 Cover tightly with aluminum foil and refrigerate at least 8 hours but no longer than 24 hours.
  • 4 Heat oven to 375°. Bake covered 45 minutes. Sprinkle with cheese. Bake uncovered about 10 minutes or until cheese is melted and casserole is bubbly.

My in-laws came over Sunday for dinner and I knew we were going to be gone all day and thought this would work perfect. PERFECT it was!! I am a younger, rookie cook and this turned out awesome. My father-in-law ate half of the pan! I made it up the morning of, and didn't have it marinade the full 8 hours, but still turned out great. For dessert I made the Warm Caramel Apple Cake (http://www.bettycrocker.com/recipes/warm-caramel-apple-cake/7cf74064-7e6d-48d4-976f-b8d1dd1c170c) and that was also like heaven. This meal was a hearty home run for the cold fall weather and would definitely make both again! Thanks Betty :)

Well okay, it was certainly quick and easy to make. But the end result was just "meh"...not terrible or inedible...just nothing special. After 45 minutes in the oven it still seemed a bit soupy, so I put it in uncovered for another 10 minutes which firmed it up nicely, then added the mozzarella for 5 minutes. It smelled good...but it really had no strong flavor profile. It didn't really taste Italian. It tasted exactly like what it was: tomato sauce, meat, pasta and cheese. I agree with the reviewer below that the rotini was really soft and squishy. I think what this recipe needs is a good hit of Worcestershire sauce or red wine vinegar to wake it up. Overall, if I make it again I'll definitely add more spices to give it a bit more personality.

Great dish, with a few changes; Used Italian Sausage (grilled on my charcoal grill and chopped )instead of beef, Added some porcini mushrooms, and a couple of green onions chopped as a garnish. Overnight really works well to blend all the wonderful flavors together.
