Simply the best ever caramel corn recipe, I have been making it for years when my children were young and now my grandkids I also double batch it..when done its also great to mix with cheese popcorn for a great sweet and salty snack. Been making this recipe for over 30 years! So hope ya all enjoy:-)

This was a really yummy recipe! I did add vanilla like a few other people suggested. I actually made extra of the caramel sauce to pour over the popcorn, because it didn't seem like enough. I baked it a little longer than 1 hour too, because of the extra caramel sauce. I also added unblanched peanuts instead of the other nuts suggested (although I would recommend toasting them first for just a little bit before adding them to the caramel popcorn mix). The bottom of the pan with the extra caramel didn't harden like the rest of the popcorn, but that was all the better for me because I just took a spoon and licked off the extra caramel ;)

Great recipe! I added 1 tsp vanilla (thank you utah chef) and used 1 ex-large bowl instead of 2 baking dishes (thank you D=). I put the popcorn and unsalted peanuts in the bowl and put in the 200degree oven to warm while making candy. Used the 3qt pot and started the 5 minute timer just after seeing the first bubbles on side of pot. Made two batches and both were perfect!

This is wonderful! =) I added vanilla after stirring in the baking soda and replaced the pecans with dry roasted peanuts..DELICIOUS. Bet my family will eat it all before the day is over. =) For a cheaper alternative, I air-popped the popcorn into a very large metal bowl (with no rubber on it;) and just left the popcorn in that bowl to put it in the oven...saved me from washing a few more big dishes; much easier to stir w/o getting it all over the counter; served it in the large bowl. Hope you enjoy it, too. Excellent warm or cold!
