Julienne carrots are matchlike sticks of carrots that add an interesting shape to this soup. But to save a little time, you can cut the carrots into 1/4-inch slices.
Coarsely ground fresh pork is sometimes labeled "chow mein meat." If it isn't available at your store, use regular ground pork, chicken or turkey. Drained canned sliced mushrooms and bean sprouts come in handy when you don't have the fresh on hand.
Spoon a mound of hot cooked rice into each bowl of soup before serving, and sprinkle with some sliced green onion tops.
