  1. Preheat oven to 500 F
  2. In a small bowl, mix together the lemon zest, parsley, and garlic.
  3. Place the chicken on a work surface. Manually lift the skin away from the breast meat and lightly coat thefleshwith lemon zest mixture. Rub some of the mixture onto the skin covering the legs and thighs, and more of it inside the chicken cavity, on the cavity surface.
  4. Combine what's left of the lemon zest mixture with te oil, salt, and pepper in a bowl; set aside.
  5. Place the chicken, breast side down, on a rack in a roasting pan and bake for 20 minutes. Turn the bird breast side up and spoon some of the oil mixture over it; bake for 10 more minutes or until the breast is lightly browned.
  6. Lower the heat to 320 F and baste again. Continue roasting until a thermometer inserted into the thickest part of the thigh reads 160 F to 165 F. (total cookig time willbe about 1 hour.)
  7. Transfer chicken to a platter, let cool for 5 vminutes, then carve and serve.
