This was my first time out making Oreo Truffles. I made two versions--white chocolate and semi-sweet chocolate. May I recommend a couple of modifications? First, be careful not to over-soften the cream cheese! I had to make sure mine was cooled back off a little bit so I could work with it. Also, add a little vegetable shortening to the chocolate coating. I'd recommend 2 tbsp. per 12 oz. of chocolate coating. The shortening makes the chocolate so much easier to work with--and not oily at all!
Now, I'm not normally a white chocolate fan--dark chocolate all the way! I made these in white chocolate for my mom, dark chocolate for my dad, and of course had to sample the wares myself. All I can say is, I thought I had tried good truffles before. Yowza! These are amazing, and definitely worth the effort.
