Orange-Strawberry Salad

Ingredients

Dressing

  • 1 teaspoon grated orange peel
  • 1/4 cup orange juice
  • 2 tablespoons sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon salt

Salad

  • 3 oranges, peeled, sliced
  • 1 cup sliced fresh strawberries
  • 6 cups salad greens

Steps

    In tightly covered container, shake all dressing ingredients.
  • 2
    Serve oranges and strawberries on salad greens. Serve with dressing.

  • This refreshing dressing is also nice to have around for dressing up fruity pasta salads. Or drizzle it over melon cubes tossed with banana slices.
  • If you like cilantro, you can use it instead of the parsley.
