Excellent "stand alone" salad, or as a side to a light meal. Wanting to make it its' own meal I added some grilled chicken and toasted pecans then used garden spinach and vegetable wraps to make everyone their own wrap. Next time I will put an asian salad spin on it by using mandarin orange and crispy chow mein noodles. Either way, you cannot go wrong, it's easy, simple and a hit!

I fixed this for Christmas Eve. I did not have the Kewi and it was still praised. I also like it with grapefruit and avacado.

I took this to a friends for Christmas dinner this year to go with her pork shoulder roast and everyone "really loved it". They kept saying how good it was, over and over. I will make often.

A real hit for guests last night. Very tasty, and quite good as a leftover for lunch the next day! The guys couldn''t get enough of the mandarin oranges. Very flavoursome.
