Orange-Poppy Seed Salad

This salad with few ingredients gets plenty of “zip” from a quick and easy tangy dressing.

Ingredients

Salad

head romaine lettuce, torn into bite-size pieces
2
medium oranges, peeled, sectioned and cut in half
2
kiwifruit, peeled, sliced and cut in half
1/2
medium red onion, sliced

Classic Poppy Seed Dressing

1/2
cup regular or reduced-fat mayonnaise or salad dressing
1/3
cup sugar
1/4
cup milk
2
tablespoons white vinegar
1
tablespoon poppy seed

  • 1 In large bowl, mix all salad ingredients.
  • 2 In small bowl, mix all dressing ingredients until well blended. Pour over salad; toss to coat. Serve immediately.

Expert Tips

Kiwifruit Peeling 101: First cut about 1/8 inch off of one end. Next, slip a spoon between the fruit and the skin and move it so that it loosens the skin all the way around. Simply slip the peel off, and you have a perfectly round peeled kiwifruit!

Balsamic vinegar instead of the white vinegar gives the salad dressing a sweeter, richer flavor.

I made this salad years ago for Christmas and always get rave reviews! Even family members we visit over the holidays insist I make this salad! It wouldn't be Christmas dinner without it! The freshness of the fruit with the creamy sweet and tangy dressing is a winning combination.

Fantastic. Next time I will try different fruits, like Pineapple and Strawberry. Actually, the dressing is great on just about any fruit, such as grapes, cantelope, honeydew, apple. I use this dressing on chicken salad as well.
