Orange-Almond Salad in Lettuce Cups

Ingredients

  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 1/2 teaspoon Dijon mustard
  • 12 Bibb lettuce leaves
  • 2 medium oranges, peeled, divided into segments, membrane removed and cut into thirds
  • 1/4 cup chopped smoked almonds

Steps

  • 1
    In small bowl, mix orange juice, honey and mustard with fork.
  • 2
    On each of 4 salad plates, arrange 3 lettuce leaves. Fill lettuce leaves with orange pieces and almonds. Drizzle with orange juice mixture.

  • Instead of lettuce cups, use 2 cups torn lettuce or mixed greens and toss all the ingredients together.
