Open-Face Chicken Crostini

cup fig spread or preserves

cup finely chopped shallots

tablespoons balsamic vinegar

cups mixed baby salad greens

cups shredded cooked chicken

slices rustic Italian bread, toasted

cup crumbled goat cheese (2 oz)

  • 1 In small bowl, mix fig spread, shallots, vinegar and oil. In medium bowl, toss salad greens with 1/2 cup of the fig dressing.
  • 2 Divide greens and chicken mixture evenly among toasted bread slices; drizzle with remaining fig dressing. Top with goat cheese.
