cup fig spread or preserves
cup finely chopped shallots
tablespoons balsamic vinegar
tablespoons olive oil
cups mixed baby salad greens
cups shredded cooked chicken
slices rustic Italian bread, toasted
cup crumbled goat cheese (2 oz)
In small bowl, mix fig spread, shallots, vinegar and oil. In medium bowl, toss salad greens with 1/2 cup of the fig dressing.
Divide greens and chicken mixture evenly among toasted bread slices; drizzle with remaining fig dressing. Top with goat cheese.
Two crostini make a perfect lunch portion. If you’d like to serve this recipe as part of a brunch or lunch buffet, serve one crostini per person.
