Spiced pumpkin cupcakes filled with dulce de leche and crowned with cream cheese frosting. A scattering of cashews, chocolate and extra caramel make it ooey gooey good.

Amazing! A really easy way to make dulce de leche is to simply boil an unopened can (or multiple cans for later use) of sweetened condensed milk. Peel the paper off of the can, and completely submerge in pot of water. Boil for three hours. Very important to make sure the cans are always covered by an inch or more of water, so you dont end up with goo on your ceiling! But then you can store your cans of caramel for a long time in the pantry and use them as needed. So easy and tasty!

Oh my gosh!!! These were the BEST! I made them for my co-workers and I've had several people tell me they were the best cupcakes they EVER had! :) A little time-consuming, but oh so well worth every minute!

I couln't find the duls de leche and tries to make it unsuccessfully with the sweetened condensed milk so I ran out to the store and bought the t j marzetti's Carmel apple dip and piped that into the cupcakes....need I say more they were delish! Everyone loved them. Will make again.

@smilesmt01 You can easily make your own with a can of sweetened condensed milk: recipe from http://www.davidlebovitz.com/2005/11/dulce-de-lechec/ Dulce de Leche or Confiture de Lait Adapted from The Perfect Scoop (Ten Speed Press) Preheat the oven to 425° F (220° C). Pour one can (400 gr/14 ounces) of sweetened condensed milk (not evaporated milk) into a glass pie plate or shallow baking dish. Stir in a few flecks of sea salt. Set the pie plate within a larger pan, such as a roasting pan, and add hot water until it reaches halfway up the side of the pie plate. Cover the pie plate snugly with aluminum foil and bake for 1 to 1¼ hours. (Check a few times during baking and add more water to the roasting pan as necessary). Once the Dulce de Leche is nicely browned and caramelized, remove from the oven and let cool. Once cool, whisk until smooth. Store in the refrigerator until ready to serve. Warm gently in a warm water bath or microwave oven before using.

Sounds wonderful! I was preparing my ingredients to make these cupcakes for this weekend and couldn't find dulch de leche in the super market...could you substitute it for something else?
