when i mixed up the flour,cheese and butter it was so dry I was ready to throw it in the garbage. I added milk until I got the consistency I wanted and it rolled around the olive with no problem. they are very good but I really think without the milk they'd be so dry and tasteless.

My mother used to make these. I add a little cayenne to the cheese mixture and a buy a jar of jalapeno stuff olives to put inside the cheese ball.

In response to the person who wanted alternative stuffing for cheese balls...try 1/2 pitted date with 1/2 pecan piece placed inside. EVERYBODY loves these. Have been making this way for 50 years.

I have loved these since I was a kid when my mom used to have "Wine and Cheese Princess House Crystal" parties. I have also come up with a variation. I mix 4 to 6 ounces softened cream cheese, 2 tablespoons chopped pickled jalapenos and 2 tablespoons crisp bacon, crumbled/chopped finely. Mix together and make a "snake' about 1/2-inch in diameter by rolling the mixture in plastic wrap. Freeze the "snake." When cream cheese "snake" is well chilled, or even frozen, mix the cheese dough. Cut a small piece of the cream cheese mixture, about the size of an olive, and wrap in the cream cheese mixture in the dough, being careful to make sure there are no holes in the dough. Place on a pan and chill or freeze just like the olive-filled cheese balls. When needed, you bake them just like the olive cheese balls. I have also tried different cheeses for variation in the flavor of the dough. Its a very versatile recipe and ever SOO scrumptious. Martini anyone?

I stumbled onto this recipe in a search for ideas for a 70s party (sans 'fro wigs and Travolta suits). A childhood memory is solved!! I've remembered this taste, often wondering if I made it up in my head, because I never found a recipe resembling my memory. It makes sense, now, since posters have reported it being in older books but since removed. Thank you!

I made these last night for a party, they were gone in minutes. Before serving, someone thought they would be horrible using pimento stuffed olives.. however they ended up eating the most! I think you have to like olives slightly in order to like the appetizer overall. I wonder what else you could use besides olives..?

I received my Betty Crocker cook book when I got married in 1979. I have since replaced it, but have been dissapointed that some of the older recipes are not in it. I was able to find this recipe and make it for all parties. My family love them and anyone else that has tried them love them too. My niece doesn't even like green olives and she loves these.

I've made these for years. Always, always the first thing to disappear from the appetizer table. Always have to give the recipe. When I married my chef-y husband, he was skeptical, but he loved them, too. A touch of cayenne will give the crust more of a cheese straw quality, and a dash of 'wooster' sauce (the barest dash) can enrich the flavor as well. Don't use mushrooms! Too wet, too musky. You need the piquant and briny saltiness of the olives to complement the crust!

I made this the other day because I'm in need of some starters to my recipe book & I'm also a fan of olives. I must say I like the cheesy crust but I don't think the olive was a good compliment to it. I'm going to try them again but next time I'm going to try some mushrooms.
