This is a great recipe for a very tasty, yet wholesome pancake. If you happen to not have buttermilk in the house, you can substitute with 3/4 cup skim milk with about 3 tbsp butter melted into it. It tastes great and the pancakes end up very moist. Also adding a little almond or vanilla extract (about 1 tsp) livens them up a bit! Enjoy!
