pouch Betty Crocker® oatmeal chocolate chip cookie mix
1/2
cup butter, softened
1
egg

caramels, unwrapped
1/4
cup milk

Directions

  • 1 Heat oven to 375°F. Grease bottom and sides of 8-or 9-inch square pan.
  • 2 In medium bowl, stir softened butter and egg. Stir in cookie mix (dough will be stiff). Reserve 1/2 cup dough for topping. Press remaining dough into pan.
  • 3 Bake 15 to 20 minutes or until light golden brown. Meanwhile, in medium bowl, microwave caramels and milk uncovered on High 2 to 3 minutes or until cramels are completely melted, stirring every minute.
  • 4 Spread caramel mixture evenly over crust. Drop reserved cookie dough by teaspoonfuls over caramel mixture. Bake an additional 15 to 20 minutes or until golden brown. Cool 10 minutes. Run knife around edges of pan. Cool completely before cutting.

I made these with the reg. oatmeal cookie mix and added mini Choc.chips, with the caramel layer. The flavor is good, but there might need to be some baking time change. The edges can cause some serious dental problems, the rest is nice and chewy. I figure if I add a slice of white bread over-night, it might help them come morning. If not, I'll be disappointed and I don't think I'll do this again. I'm at the age/stage in life, I need recipes that take little time,effort,and with better results.

I make these all the time. Instead of Caramels I use half a jar of butterscotch caramel ice cream topping, and omit the milk. They are a BIG hit and very easily to make.
