  • 1/2 package (12-ounce size) soft silken tofu
  • 1 envelope (1 ounce) ranch dressing mix
  • 1/2 cup soymilk
  • 1 bag (12 ounces) salad greens with red cabbage and shredded carrots (8 cups)
  • 2/3 cup roasted soy nuts
  • 1/2 cup shredded reduced-fat Cheddar or blue cheese (2 ounces)

Steps

  • 1
Place tofu, dressing mix and soymilk in blender or food processor. Cover and blend on high speed until smooth and creamy.
  • 2
Toss salad greens with tofu mixture in large serving bowl. Sprinkle with soy nuts and cheese.

  • Use the ranch dressing mix that calls for milk and mayonnaise (not buttermilk and mayonnaise).
  • Bursting with fresh, good-for-you greens, this sensational salad makes it easy to get your "five (or more) a day" as it is high in vitamin A, vitamin C, calcium and folic acid. Plus you're getting the heart-protective benefits of soy protein from the tofu, soy milk and soy.
