I made this last night for the Fam. & They loved it !. A few things I did different I added chicken ( grilled with chipotle spices) chopped and added to rice mixture. I also used rice a roni Spanish rice with a added can of diced tomatoes. This is a definite keeper! Loved the flavor! served with sour cream!

I used reqular rice instead from the box and i added diced tomatoe, it came out very good my husband loved it.

EXCELLENT RECIPE! Like another review said, we used a can of tomatoes to prepare the rice. Makes a big, hearty pan. We have lots of leftovers for the week. Yum!

I thought these were great! I made some minor adjustments to accommodate my picky taste buds. Replacing the beans with ground turkey and adding a can of petite diced tomatoes made these enchiladas very flavorful. I didnt have the southwest corn but used frozen corn instead. One other thing I did different was that I did roll the tortillas. Turned out wonderful and we will be adding this recipe to the rotation.

This recipe was really good. I used corn tortillas and it doubled the amount it made. I also do not care for Enchilada sauce so I used monterey jack cheese queso dip instead. It was great!

I just love the recipe. I used the rice and vermicelli from the box, but added my own seasonings of cumin and chilli powder. I also added a 10 oz. can of Ro-Tel tomatoes and green chilli's. I put them in measuring cup and added the water in to make the right amount of liquid. I used refried beans instead of whole beans, and it came out perfect. I guess you could say I changed the whole recipe, but that wasn't my intention. I really like how it turned out, and so did my guests.
