Take the mess out of making a Mexican favorite: just fill, fold, and bake these vegetarian rice-bean-cheese enchiladas.

This was super yummy - and perfect for the cold front that just came in! I did change the recipe to make it healthier - used black beans, low fat cheese, corn tortillas and made my own spanish rice with brown rice and petite diced tomatoes. Add a side of guacamole - so yummmmmmy!!

My family loves this. I use 2 boxes of rice a roni spanish rice, 2 cans of enchilada sauce, and 2 lb of ground chicken. No beans or tomotoes. But tons of mexican cheese. This is one meal my family will eat the leftovers as a snack or for breakfast the next morning or even for supper the next night.

I made this last night for the Fam. & They loved it !. A few things I did different I added chicken ( grilled with chipotle spices) chopped and added to rice mixture. I also used rice a roni Spanish rice with a added can of diced tomatoes. This is a definite keeper! Loved the flavor! served with sour cream!

EXCELLENT RECIPE! Like another review said, we used a can of tomatoes to prepare the rice. Makes a big, hearty pan. We have lots of leftovers for the week. Yum!

I thought these were great! I made some minor adjustments to accommodate my picky taste buds. Replacing the beans with ground turkey and adding a can of petite diced tomatoes made these enchiladas very flavorful. I didnt have the southwest corn but used frozen corn instead. One other thing I did different was that I did roll the tortillas. Turned out wonderful and we will be adding this recipe to the rotation.

This recipe was really good. I used corn tortillas and it doubled the amount it made. I also do not care for Enchilada sauce so I used monterey jack cheese queso dip instead. It was great!
