I am disabled and can't spend very long on my feet. That doesn't stop me from wanting to make delicious deserts with the time I can spend standing though. The small amount of time it takes to make this pie and how flavorful it turns out to be in the end is where this recipe really shines. I substituted orange juice for the lime juice and it turned out just as delicious. My husband was very impressed and set about licking the spoon when I was done. I can't wait to try the lime version and experiment with other juices too! This is really the perfect pot luck/get together pie.
