I agree with the user who said many of us don't have the carcass to make broth. I buy a breast so I don't have tons of leftovers since there's just 2 of us. People need to realize when they are given these recipes that everyone is different and their needs may be different so, like any good cook, you adjust the recipe to fit your needs. I don't understand how you can give this one or two spoons for a rating just because they do it differently and choose to use the broth they want, or the vegetables they want. Basically they are providing us with an idea what to do with leftovers and I am thankful they did! Thanks everyone else for your additional ideas !!

Great recipe! Please don't argue over what broth to use. Whatever you do, it will be terrific and your family will love it. I never use salt in anything so using a fresh carcass and water with the veggies is no sodium for us. Instead of the pasta, I throw in stuffing and it works great. Whatever you do, it's nourishing and feeds our families.

This has a wonderful flavor and is nice to make for those times when you can't use left over turkey bones because of un-availabilty or allergy to the substances boiling the bones create. We will make this again and again. Thank you Chef Chiarello!

Thank you for a new spin on my old stand-by soup... making the veggie's flavor burst forth with saute-ing them up FIRST... and so many variations from all the posts are wonderful for the toolbag ;) I also will throw the "leftover plate" (meaning, what you would NOT want to make yet ANOTHER plate's serving on the fourth day post-Turkey day...) into a pie crust shell, making a quick take home pot-pie of sorts, for each guest as they leave our home :) Sure, throw the stuffing in, and make a crust out of THAT... get creative, and I'll guarantee you your guests will love that they don't have to cook the next day, & they don't have to take their leftovers out of 8 different containers to make that plate up :) Happy Thanksgiving everyone!

I was really disappointed in the use of a commercial chicken broth instead of making a stock from the carcass of the turkey. Those commercial broths have just too much salt in them. I was hoping to have a new slant on making the stock from the carcas. Oh well.

The recipe sounds delicious but as usual, way too much sodium. I would think you would have enough broth from boiling the turkey carcass even though that is time consuming.

Making broth by cooking the carcass makes some people sick because it creates glutamate, like in MSG. Try using vegetable broth, which is also better if you make it yourself.

Once you've had the home-made version you will never consider canned broth as an option! I'm with Jozlyn - preferring to make my own broth from the carcass but I never thought to add crushed garlic and that sounds wonderful! I only add water as needed to keep the carcass covered. To the strained and de-fatted broth add shredded carrots, minced onion, shredded cabbage and simmer all until the veggies are done. Then I add the chopped turkey and lots of medium size egg noodles. Continue at a low-medium heat until the noodles are done. Season to taste and serve!
