cups broccoli flowerets or snap pea pods

cup water

new red potatoes, (3/4 pound), cut into fourths

boneless skinless chicken breast halves, (3/4 pound), cut into 1-inch cubes

jar (12 ounces) chicken gravy

  • 1 Mix all ingredients in 3-quart saucepan.
  • 2 Heat to boiling, stirring occasionally; reduce heat. Cover and simmer 15 to 20 minutes, stirring occasionally, until potatoes are tender and chicken is no longer pink in center.

I use whatever potatoes I have on hand, I use carrots instead of broccoli and I use 1 cup Chicken Broth instead of water. Then I season to taste. This is a winter staple for my husband and I.

I made this for dinner tonight. I used regular potatoes cut into 1 inch cubes instead of new potatoes, and added salt, pepper, garlic powder, a splash of Worcestershire sauce and Tabasco sauce. I also added 2 diced onions that I sweated in the pot in about 2 tablespoons of olive oil before adding everything else. I used 2 jars of chicken gravy and about 1-1/2 cups of water. At the very end, I added about 2 cups of frozen (partially thawed) broccoli florets and 2 cups of frozen carrots (partially thawed and diced into bite size pieces). It came out fabulous!

I made this with snap peas, not broccoli. Added onion, carrots, and the extra gravy. It was good. I saw the other reviews. You do not use a mixer, use a spoon to stir next time. :()
