cup canola oil

cups brown sugar

cups peeled shredded zucchini

tablespoons vanilla

cups flour

teaspoon salt

teaspoon baking soda
1/4
teaspoon baking powder

teaspoon cinnamon
1/2
cup nuts or raisins
  • 1 Mix oil, sugar, eggs, succhini, and vanilla. Sift together flour, salt, baking soda, baking powder, and cinnamon and add to the first mixture. Stir in nuts or raisins until blended. Bake in 2 greased and floured 9"x5" loaf pans in 350 degree oven for one hour.

I tried this recipe using 2 cups on honey instead of the brown sugar. It is not so sweet but very good.
