Mushroom and Walnut Appetizers

Enjoy these cheesy mushroom appetizers made using Original Bisquick® mix and spinach.

Ingredients

  • 1 package (8 oz) fresh whole mushrooms, sliced (3 cups)
  • 1 cup chopped onion
  • 1 clove garlic, finely chopped
  • 2 tablespoons butter or margarine
  • 2 cups shredded Swiss cheese (8 oz)
  • 1 1/2 cups coarsely chopped walnuts
  • 1 box (9 oz) frozen spinach, thawed, squeezed to drain
  • 1 1/3 cups milk
  • 3 eggs
  • 3/4 cup Original Bisquick™ mix
  • 1 1/2 teaspoons salt

Steps

    Heat oven to 400°F. Spray 13x9-inch pan with cooking spray. In 10-inch skillet, cook mushrooms, onion and garlic in butter over medium heat about 5 minutes or until onion is tender; drain.

    In pan, mix mushroom mixture, cheese, walnuts and spinach; spread evenly. In medium bowl, stir all remaining ingredients with wire whisk or fork until blended. Pour into pan.

    Bake 25 to 30 minutes or until knife inserted in center comes out clean. Cool 30 minutes. To serve, cut into 9 rows by 3 rows.

    Place the thawed spinach between several layers of paper towels. Then roll and squeeze the paper towels to remove excess moisture from the spinach.
