This was the easiest cake I have ever made and also very good and moist. Took some to a friend and she ask for the recipe the next day. Very good as an after dinner dessert and also as a coffee cake in the morning.

Tried this tonight and it was delicious. I didn't have an apple so I doubled the carrots. Also, used pecans. Took some to a sick friend and they immediately asked for the recipe. Great when warm.....

I made this for Women's Camp a couple of weekends ago and it was a huge hit. I made it without the eggs, as we had run out, and it still came out wonderfully moist and delicious. It is going to be a keeper for future encampments for sure.

My Husband loved this coffee cake. He said I can make this any time I want. I loved it also, and it turned out just like the picture. I did not have an 8 inch pan so I used a 9 inch and decreased the cooking time. Turned out great.

This is easy and delicious. It gets eaten much faster than it should and we miss it when it is gone. It tastes homemade from scratch and is a perfect dessert or any other excuse you need to eat something yummy!
