tablespoon balsamic vinegar
tablespoon olive oil
tablespoon chopped fresh basil
tablespoon chopped fresh parsley
large tomatoes, coarsely chopped
oz Mozzarella cheese, cubed (2 cups)
In large bowl, mix vinegar, oil, basil and parsley with whisk. Stir in tomatoes and cheese; toss gently.
Excellent served with focaccia bread!
