It's a good thing I was STARVING when I made this because, good or bad, I was going to eat it. I can say this--it's edible, but I'll never make it again. For all its ingredients it has almost no flavor. The raisins are a big help so you may want to add more of those. And the cooking time is WAY off. It takes FOREVER for butternut squash to soften, far longer than 8 minutes.

This is a staple recipe for me. I make it all the time, it's a great one dish meal. I do change things around a bit, here is some of what I do: 1. I put in less cinnamon (about 1/2 the amount), I use Parmesan couscous instead of rice, and lastly I serve with feta cheese. It's fabulous! Enjoy.
