I also did a hummingbird makeover of these muffins! I used crushed pineapple,(1can) and 1/2cup each of shredded coconut, pecans, and mashed banana! I used cinnamon and nutmeg in place of the pumpkin spice and used coconut oil in place of butter! I also used a product called Fibersorb and let 5grams soak in a 8oz glass of warm water, it completely replaced the milk and also absorbed half the fat and calories making this Glorious "muffin" cake nutritiously yummy!!! Will make again...and again, and so on :)

After reading the comments about this recipe being to dry I tried something different. I added 1/2 cup crushed pineapple with juice and brought the temp down 25 degrees. Also put in 2 teaspoons pie spice plus 1/2 t. cinnamon in the dry. Added 1/2 t, cinnamon in the topping. Got thumbs up from our breakfast group. As the last comment says mix all the dry thourghly then make a hole in the middle of the dry and add the wet all at once and mix only till combined. Do not over mix.

i made it twice its delicious, i mixed together all the wet ingredients so i didnt have to over mix and it came out great

Oh my gosh! These are DE-LISH!!! I actually grated the carrots and added the raisins in a bowl the night before, mixed my strussel in a bowl and my bisquick and spices in another separate bowl and had it all ready to dump and bake first thing in the morning. QUICK!! AND YUMMY!!!!

This looked really good, but when made I thought it was dry and lacked sweetness. It could also use more cinnamon or pumpkin pie spice.

Tastes gooie, doughie, not flaky or crumbly. Has no rise or fluffiness. Topping tastes butterie. I did not like this recipe and feel like i wasted my time chopping walnuts, measuring all the ingredients and baking this recipe. In fact after 10 bites I was most certain this was not going into my stomach anymore and through the entire batch into the trash. I do not recommend this recipe. I give it a 1 out of 10.

loved it and so did my family...even 20 month old. cant beleive this has 18 grams of fat, but has a lot of health ingredients that are hard to get kids to eat like carrots, pineapple and nuts.worth the time!
