Ingredients

pound ground turkey

medium green onions, sliced (1/2 cup)
1/4
cup coarsely chopped carrots
1/4
cup diced red bell pepper
1
teaspoon grated gingerroot

cloves garlic, finely chopped
1/2
cup fresh bean sprouts
1/3
cup soy sauce
1/3
cup packed brown sugar

medium iceberg or Bibb lettuce leaves, rinsed, patted dry with paper towel

  • 1 In 10-inch nonstick skillet, cook turkey over medium-high heat, stirring frequently, until no longer pink; drain and return to skillet. Stir in onions, carrots, bell pepper, gingerroot and garlic. Cook 2 minutes, stirring occasionally, or until vegetables are crisp-tender.
  • 2 Add the bean sprouts, soy sauce and brown sugar. Cook 2 minutes, stirring occasionally, to blend flavors.
  • 3 To serve, spoon turkey mixture onto each lettuce leaf; wrap around filling. Serve warm.
