I have switched up the cheese many times, with each combination just as good as the original.
One particular flavor combination we like just as much as the original is subbing half the cheese with Monterey Jack, giving the Spinach Cheese Squares a slightly creamier taste.
I have also used one tablespoon of butter, instead of two, to cut back a bit on the fat, and it’s worked just as well.
