Mom's Meat Bars (Meatloaf)

My mom makes her meat loaf in a 9x12 inch pan. It's not so much a loaf as "meat bar," hence the name. I love the crackers in the meat mix and the yummy brown sugar and ketchup "frosting."

Ingredients

pounds 85% lean ground beef
1
egg
1/4
cup finely chopped onion
30
saltine crackers, crushed finely
1/2
cup milk
1/4
tsp pepper
1/2
tsp salt
TOPPING
3/4
cup ketchup
1/2
cup brown sugar
1
tbsp dijon mustard

Directions

  • 1 Mix the first 7 ingredients together and form into a 3/4 to 1 inch high loaf in a greased 9 by 12 baking dish 3/4 cup ketchup 1/2 cup brown sugar 1 tablespoon dijon mustard
  • 2 Mix together topping ingredients and spread on top of meatloaf
  • 3 Bake at 350 degrees for 45 minutes

My husband LOVES meatloaf so I thought I "hunt" for a new recipe. HE LOVED IT (I did, too!)!! It was easy and delicious. I highly recommend this recipe. Thanks, Mom! ;)

This is the best meatloaf I've ever made! My grand-daughter loved it. Usually my meatloaf falls apart, but not this one. I made it in a glass 9 X 12 pan, just as shown. It did shrink away from the sides & made a nice loaf. I did change a few things. 1st I added 1 finely chopped carrot (so my Grandson gets a veggie). I used 2 lbs of ground chuck, which I believe is 80% lean. I used 2 eggs. Instead of crackers used 1 cup plain bread crumbs. Finally, I used 1 tsp dijon mustard instead of 1 tablespoon. (My grandkids don't like dijon mustard). I will definitely make it again!
