Excellent flavor and a new twist on lemon bars which my entire family (and friends) just love. This is the best shortbread crust i have ever made; it's just a perfect taste, texture and thickness for these bars cookies. I will, in fact, use them for all bar cookies that call for this type of crust. I bake a lot and am always looking for a new "twist" on tried and true recipes as well as innovative recipes. I have been asked for this recipes often and share it happily. I think the green food coloring adds to the unique appearance of these citrus flavored bars. I highly recommend trying these bars!You will be very pleasantly surprised, whether you drink mojitos or not.(i don't) Don't let the name stop you from enjoying the wonderful blend of flavors and how they are enhanced by the fresh mint.

These are amazing! I didn't want to use rum extract, so I used half vanilla extract and half coconut extract. My new favorite summer dessert. The only problem is that I couldn't get the Muppets song, "you put the lime in the coconut...." out of my head all day

I made these for Memorial day and they are to die for, everyone loved them. These are a perfect way to end a meal because they are not a heavy type of dessert. I would highly recommend this to everyone.

These are delicious doing them just as the recipe is, but I changed it up a bit and used Mojito (mint flavored) rum and mojito mix. Yum!!
