tablespoon instant coffee

cup (6 oz package) Baker's semi-sweet chocolate chips

cup milk

teaspoon salt

egg yokes beaten

egg whites

cup sugar
1/2
cup whipping cream

ready made pie crust
  1. Soften gelatin in cold water. Combine instant coffee, chocolate chips, milk and salt in a saucepan stirring constantly until chocolate is melted.
  2. Add small amount of mixture to egg yolks, stirring vigorously. Gradually add remaining chocolate mixture stirring constantly. Return to saucepan and cook and stir over low heat until slightly thickened(about 5 minutes)
  3. Remove from heat and add softened gelatin and stir until dissolved. Chill until slightly thickened
  4. Beat egg whites until foamy; add sugar gradually and continue beating until stiff peaks form. Whip the cream until stiff but still glossy. Fold egg whites and cream into chilled mixture. Pour into pie shell and chill until firm. Garnish with raspberries and whipped cream if desired and serve.
